Want perfectly crispy green beans that don’t turn out soggy or oily? The first – and most crucial – step is simply drying them thoroughly after rinsing them. Any moisture left on the beans will create steam in the oven, turning your green beans into a limp, soggy mess.

The second essential step is to add oil sparingly. One tablespoon of melted coconut oil should be sufficient for a pound of green beans. You can toss the green beans with the oil and seasonings in a large bowl, or mix them directly on the sheet pan. Too much oil will give the beans a greasy texture and could contribute to burning them more quickly.

The third step is almost as important as the first two. Make sure the green beans are placed in a single layer on the sheet pan. Using more than one pan is okay. Distribute them evenly, taking care not to stack or crowd them.

Next, be sure to turn the green beans halfway through the cooking process. Watch them to be sure they aren’t burning or browning too quickly. Remember when broiling anything that it only takes a second for your dish to go from perfectly cooked to incredibly burnt. After turning, make sure they are still evenly distributed.

Finally, if you like salty, crunchy snacks, try this method with different vegetables. This recipe would work well with kale, carrots, beets, zucchini, and a wide variety of other veggies.

Ingredients

  • 1 pound fresh green beans, ends trimmed
  • 1 tablespoon coconut oil, melted
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with foil and set aside.
  2. In a bowl, combine all ingredients and toss to coat the beans in the oil and seasonings. Spread in an even layer on the baking sheet. It is very important that the beans are spread out on the baking sheet. If needed, use two sheets.
  3. Bake the beans for 20 minutes, or until crispy but not burnt, gently turning over about half way though. Remember, the beans will crisp up a little as the cool. Let cool before serving, serve on their own or with a spicy dipping sauce.
